Select and chill oysters

Purchase fresh, live oysters from a reputable source. Keep them cold on ice from purchase until shucking — store in the refrigerator or a cooler. Do not store oysters submerged in fresh water.

Prepare service bed

Place a shallow serving platter or trays on the counter. Spread the crushed ice or a bed of rock salt evenly to create a stable base for the oysters, about 1/2 to 1 inch thick (approximately 6 cups total for 24 oysters). This keeps shells level and cold while serving.

Shuck oysters

Working one at a time, hold an oyster cup-side down in a towel with the hinge facing you. Insert a short, sturdy oyster knife into the hinge and twist to pop it open. Run the knife along the top shell to sever the muscle and remove the top shell; discard top shell. Slide the knife under the oyster meat to sever the bottom muscle, keeping the oyster level so the liquor stays in the shell. Place each half shell with oyster on the prepared bed of ice, arranging them closely to prevent tipping. Repeat until all oysters are shucked. Wipe any shell fragments from the oyster and check for grit; scrape gently if needed.

Garnish and serve

Arrange lemon wedges around the platter. Place cocktail forks nearby. Keep oysters chilled on the ice bed until served immediately. Encourage guests to add a small squeeze of lemon or spoon a little mignonette or sauce onto each oyster before consuming.

Mignonette Sauce

Combine red wine vinegar and minced shallot in a small bowl. Add freshly ground black pepper and fine sea salt, stir to dissolve. Let the mixture rest at least 10–15 minutes at refrigerator temperature to mellow and allow flavors to marry. Taste and adjust salt or pepper as needed. Stir in snipped chives if using. Serve chilled in a small bowl with a tiny spoon so guests may drizzle a small amount (about 1/2 teaspoon) over each oyster.

Stir together creamed horseradish, ketchup, and hot sauce in a small bowl until smooth. Taste and adjust hot sauce for heat. Transfer to a serving ramekin and refrigerate until service. Guests can add a small dab to oysters for a spicy-sweet kick.

Classic Cocktail Sauce (optional)

Whisk ketchup, prepared horseradish, lemon juice, and Worcestershire sauce together in a bowl until combined. Adjust horseradish or lemon to taste. Chill until serving. Provide a small spoon for guests to add to oysters if desired.
