Measure and combine beans
Measure 1 cup medium-roast whole beans and 1/4 cup dark-roast beans. Combine in a bowl and mix gently to distribute the dark roast evenly through the blend. This creates Joe's House Blend with balanced brightness and body.
Store blended beans
Transfer the mixed beans to an airtight container and store in a cool, dark place. Use within 2–3 weeks for best freshness; grind only what you need just before brewing.
Grinding & Brewing (makes about 4 cups)
Grind the beans
Weigh or scoop 1.25 cups of the blended beans (this equals the ground amount needed for 4 cups brewing). Grind to a medium-coarse consistency appropriate for drip or pour-over methods — similar to coarse sand. If using a burr grinder, set it to the medium setting and grind in short pulses to avoid overheating.
Heat the water
Bring 4 cups (about 950 ml) of filtered water to a boil, then remove from heat and let stand 30 seconds so temperature falls to ~93°C (200°F). Using water at the right temperature extracts flavor cleanly without bitterness.
Prepare the brewer
Place a clean paper filter (if using drip/pour-over) in the brewer and rinse it with hot water to remove paper taste and preheat the brewer. Discard rinse water.
Bloom (for pour-over or manual brew)
Place the ground coffee into the filter. Pour 60–80 ml (about 1/4 cup) of the hot water evenly over the grounds to saturate them. Allow the coffee to bloom for 30–45 seconds — it will puff and release CO2.
Continue pouring
After blooming, slowly pour the remaining hot water in a steady spiral (or allow the drip brewer to run) until you reach 4 cups total. Aim for an overall brew time of 3.5–4.5 minutes for drip/pour-over. If using an automatic drip machine, simply start the machine after adding grounds and water to its reservoir.
Serve
Once brewing finishes, remove the filter and discard used grounds. Swirl the brewed coffee gently in the carafe to homogenize flavors, then pour into mugs.
Optional Finishing
Sweeten and cream
If desired, add up to 2 tsp granulated sugar and 1–2 tbsp milk or cream per cup. Stir to dissolve. For a lightly flavored variation, add 1/4 tsp vanilla extract and a pinch (about 1/8 tsp) of ground cinnamon to the milk before adding to the coffee.
Adjust to taste
Taste and adjust sweetness or milk amount to preference. Leftover brewed coffee can be refrigerated up to 48 hours and reheated gently.
