Combine dry ingredients

In a medium mixing bowl, combine rolled oats, almonds, cashews, peanuts, pumpkin seeds, dried cranberries, coconut flakes and (if using) freeze-dried fruit, chia seeds and cinnamon. Toss gently to distribute ingredients evenly.

Make binder

Warm and mix binder

In a small microwave-safe bowl or small saucepan, warm the peanut butter and honey together for 15–25 seconds (or over low heat) until pourable but not hot. Stir in vanilla extract and sea salt until smooth.

Coat dry mix

Pour the warm peanut butter-honey mixture over the dry ingredients. Use a spatula to fold everything together until the oats and nuts are evenly coated. The binder will lightly clump some ingredients so the mix holds together in small clusters.

Portioning & finishing

Divide the trail mix into a single individual serving (approximately 1 cup / 120–140 g) and place into a small resealable bag or jar. If you plan to eat within a day, add the chocolate chips now; for longer storage, add chocolate just before eating to prevent melting.

Taste and adjust: if you want sweeter mix, drizzle an extra 1 tsp honey and toss. For more saltiness, sprinkle a light pinch of sea salt and toss.

Storage: Store sealed at room temperature for up to 1 week, or refrigerate up to 2 weeks. If refrigerated, let come to room temperature before eating for softer texture.
