Prepare and dry

Rinse the cleaned calamari rings and tentacles under cold water. Pat them thoroughly dry with paper towels. Spread them in a single layer on a tray and blot again so there is minimal surface moisture — this helps the coating adhere and prevents oil spatter.

Place calamari in a bowl, squeeze the juice of half a lemon over them, add 1 tsp salt and 1/2 tsp black pepper, toss to combine, then let sit 5–10 minutes while you prepare the breading. After resting, pat dry again if any liquid accumulated.

Mix dry coating

In a shallow wide bowl or rimmed baking sheet, whisk together 1 cup all-purpose flour, 1/4 cup fine cornmeal or semolina (if using), 1/4 cup cornstarch, 1/2 tsp baking powder, 1/2 tsp paprika, 1/2 tsp garlic powder, and 1/2 tsp dried oregano. Taste a pinch and adjust salt if desired.

Prepare wet dip (optional)

In a separate shallow bowl, beat 1 large egg with 1/2 cup milk or buttermilk until combined. This creates a sticky layer that yields a slightly thicker, more uniform crust. If you prefer a lighter, drier crust, skip the wet dip and dredge calamari directly into the dry mix.

Coat the calamari

Working in batches to avoid crowding, dredge the calamari rings and tentacles first briefly in the wet dip (if using) then shake off excess and toss in the dry flour mixture until well coated. For a lighter coating, dip directly into the dry mixture, pressing lightly so the flour mixture adheres. Transfer coated pieces to a wire rack set over a baking sheet to rest 5 minutes — this helps the crust set and reduces shedding during frying.

Heat oil

Pour neutral oil into a deep pot or heavy-bottomed skillet to a depth of about 2 to 2.5 inches (enough to fully submerge rings). Heat over medium-high until the oil reaches 350–360°F (175–182°C). If you don't have a thermometer, test with one small crumb of bread — it should brown in about 30–40 seconds.

Fry in small batches (do not overcrowd) to maintain oil temperature. Gently lower coated calamari into the oil using a spider or slotted spoon. Fry each batch 1.5–2 minutes until golden and crisp. Tentacles may take slightly longer (2–2.5 minutes). Turn pieces as needed for even color.

Remove fried calamari with a slotted spoon and transfer to a paper towel-lined tray or wire rack. Immediately season lightly with a pinch of salt while still hot. Let oil return to temperature between batches (monitor with thermometer).

For extra lightness, once all batches are fried, you can give them a very quick re-fry (10–15 seconds) at 375°F (190°C) just before serving to refresh the crispness.

To Serve

Arrange the hot fried calamari on a serving platter. Sprinkle with chopped parsley and serve with lemon wedges and a small bowl of marinara or aioli for dipping. Recommend squeezing fresh lemon over the calamari just before eating.

Serve immediately for best texture. Leftovers can be kept in a single layer on a baking sheet in a 250°F (120°C) oven for up to 20–30 minutes to retain some crispness, but freshly fried is best.
