Stone Crab & Dipping Sauce

Prepare Crab & Plate

Check and Chill

If your stone crab claws were delivered cold but not fully chilled, place them in the refrigerator for 30–60 minutes so they are well chilled before serving. Stone crab is traditionally served cold.

Arrange a serving platter with a bed of crushed ice (about 4 cups) to keep claws cold during service.

Place the chilled stone crab claws on the ice, spacing them so guests can access each claw. Provide crab crackers or mallets and cocktail forks at the side.

Warm Butter & Lemon

Clarified/Drawn Butter (quick)

In a small saucepan over low heat, melt 2 tablespoons unsalted butter until just melted and warm (do not brown). Remove from heat and keep warm for dipping. Alternatively, for a clearer butter, skim foam and separate milk solids after melting for 1 minute on low.

Cut the lemon in half. Reserve one half for squeeze-over and slice the other half into 4 wedges for garnish.

Mustard Dipping Sauce

In a small bowl, combine 3 tablespoons mayonnaise, 2 teaspoons prepared mustard, 1 teaspoon sweet pickle relish, 1 teaspoon Worcestershire sauce, 1 teaspoon hot sauce, 1 tablespoon finely chopped parsley, 1 teaspoon kosher salt, and 1 teaspoon freshly ground black pepper. Mix until smooth and taste; adjust seasoning with more lemon juice or hot sauce if desired.

Transfer the mustard sauce into a small ramekin and chill briefly (5–10 minutes) if you prefer a cold sauce. Place another ramekin with the warm melted butter beside it for variety.

Serve

Provide guests with lemon wedges and microgreens or extra parsley to garnish the platter. Encourage guests to crack the claws, extract the meat, and dip into either warm butter or the mustard sauce.

If any leftover crab meat is present, cover and refrigerate within 2 hours and consume within 24–48 hours.
