Prepare crab meat

Inspect the crab meat and pick through to remove any shells or cartilage. Gently break up any large lumps with your fingers, keeping pieces fairly large for texture.

In a large bowl whisk together 1 large egg, 1/2 cup mayonnaise, 1 tablespoon Dijon mustard, 1 teaspoon Worcestershire sauce, 1 tablespoon Old Bay seasoning, 1 tablespoon fresh lemon juice, 1 teaspoon lemon zest, 2 tablespoons finely chopped parsley, 2 tablespoons chopped scallion, 2 tablespoons minced celery, 3/4 teaspoon kosher salt and 1/2 teaspoon freshly ground black pepper until smooth and homogenous.

Fold the crab meat gently into the dressing mixture with a rubber spatula, taking care not to pulverize the lumps. Sprinkle in 1/2 cup fine dry breadcrumbs and fold just until mixture holds together when pressed. Avoid overmixing.

Divide the mixture into 6 equal portions (about 6 ounces / ~170 g each) for colossal-size cakes. With lightly oiled hands, form each portion into a compact patty about 3 inches wide and 1 inch thick. Place formed patties on a parchment-lined baking sheet. Cover and refrigerate for at least 30 minutes and up to 2 hours to firm — this helps them hold together during cooking.

Coating & Cooking

Set up a dredging station: shallow bowls or plates with (1) 1/2 cup all-purpose flour seasoned lightly with 1/4 teaspoon salt and 1/8 teaspoon pepper, (2) 1 beaten egg, and (3) 1 cup panko breadcrumbs. For a uniform crust, press each chilled cake into the flour, tapping off excess, then dip into the beaten egg, finally press into panko breadcrumbs until evenly coated. Transfer to a plate and let rest 10 minutes to allow coating to adhere.

Heat a large nonstick or stainless-steel skillet over medium heat. Add 2 tablespoons neutral oil and 2 tablespoons unsalted butter; when butter foams and just begins to brown slightly, reduce heat to medium-low to prevent excessive browning.

Working in batches if necessary (do not overcrowd the pan), add the crab cakes and cook for 4–5 minutes per side until deep golden brown and a crust forms. Flip carefully with a wide spatula. If cakes are browning too quickly, lower heat; if they are not developing color, raise heat slightly. Total cook time should be about 8–10 minutes per cake depending on thickness. Internal temperature should reach 145°F (63°C) if measured.

Transfer cooked crab cakes to a rack set over a sheet pan or paper towels to drain briefly. Keep warm in a low oven (200°F / 95°C) if cooking in batches.

Lemon Aioli (optional)

Whisk together 1/2 cup mayonnaise, 1 tablespoon fresh lemon juice, 1/2 teaspoon Dijon mustard, 1 finely minced garlic clove, 1/4 teaspoon salt, 1/4 teaspoon black pepper and 1/4 teaspoon hot sauce (if using). Taste and adjust seasoning; chill until ready to serve.

Plating & Garnish

Place one colossal crab cake on each plate. Spoon a dollop of lemon aioli alongside or smear beneath the cake. Garnish with a sprinkle of chopped parsley and a lemon wedge. Serve immediately.
