Crab Cakes
Prepare crab mixture
Place the 1 lb lump crab meat in a large shallow bowl. Gently fold in 0.75 cups panko breadcrumbs, 0.5 cup mayonnaise, 1 tbsp Dijon mustard, 1 tsp Worcestershire sauce, 1 tsp Old Bay, 0.5 tsp hot sauce, 1 tbsp fresh lemon juice, 1 lightly beaten egg, 2 tbsp sliced scallions, 2 tbsp chopped parsley, 0.5 tsp salt, and 0.25 tsp freshly ground black pepper. Mix gently with a rubber spatula or your hands just until combined — avoid breaking up the lumps of crab. Chill the mixture in the refrigerator for 20–30 minutes to hydrate the breadcrumbs and firm the cakes.
Form colossal cakes
Line a sheet tray with parchment. Divide the mixture into 4 portions (about 4 oz each for large single-serving cakes or adjust to make 2 very large cakes). With lightly oiled or damp hands, form each portion into a compact round about 1 to 1-1/4 inches thick. For a crisp exterior, gently press each cake into 0.25 cups extra panko to lightly dust the outside, shaking off excess. Return to the fridge for 10 minutes to firm.
Pan-fry to finish
Heat a large skillet over medium heat. Add 2 tbsp unsalted butter and 1 tbsp neutral oil; when the butter foams and the fat is hot but not smoking, add the crab cakes (work in batches if needed). Cook without disturbing 3–4 minutes until the underside is deep golden brown. Carefully flip and cook the second side 3–4 minutes more until golden and the internal temperature reaches 145°F (if you have a thermometer) or the center is hot and set. If cakes brown too quickly, lower the heat and finish for 1–2 minutes covered to heat through. Transfer to a warm plate in a low oven (200°F) while you cook remaining cakes.
Herb-Lemon Aioli (serve with cake)
While crab mixture chills, whisk together 0.5 cup mayonnaise, 1 tbsp fresh lemon juice, 0.5 tsp minced garlic, 1 tsp chopped dill, 1 tsp chopped chives, 0.25 tsp hot sauce, 0.25 tsp salt and 0.125 tsp black pepper in a small bowl until smooth. Taste and adjust lemon, salt or hot sauce to preference. Chill until ready to serve.
Finishing & Serve
Storage and make-ahead: Crab mixture can be formed into cakes and refrigerated up to 24 hours before frying; cooked cakes keep refrigerated up to 2 days and reheat gently in a 325°F oven for 8–10 minutes to preserve crispness.
