Shrimp Preparation

Prepare the Court Bouillon

In a large pot, bring 4 cups of water to a boil. Add aromatics such as sliced onions, carrots, celery, bay leaves, and peppercorns, if desired. Let it simmer for 15-20 minutes to infuse the flavors.

Poach the Shrimp

Once the court bouillon is ready, reduce the heat to medium-low. Add the peeled and deveined shrimp to the pot and poach for 2-3 minutes, or until the shrimp are pink and opaque. Remove the shrimp from the pot and place them in an ice bath to stop the cooking process.

Mix the Sauce

In a medium bowl, combine the ketchup, horseradish, lemon juice, Worcestershire sauce, and hot sauce. Stir well until all the ingredients are fully incorporated. Adjust the hot sauce to your liking.

Garnishing and Serving

Plate the Shrimp

Arrange the poached shrimp on a serving platter. Add lemon wedges and sprinkle with chopped fresh parsley for garnish.

Serve the shrimp with the cocktail sauce on the side for dipping.
