Preparation of Steak Tartare

Chop the Steak

Using a sharp knife, hand chop the filet mignon into small, even pieces. Place in a medium bowl.

Combine Ingredients

Add the shallot, capers, Dijon mustard, Worcestershire sauce, salt, and black pepper to the chopped filet mignon. Mix gently until combined.

Add Egg Yolk

Create a small well in the center of the mixture and place the egg yolk in the well. Gently mix again to combine.

Finish with Herbs

Gently fold in the chopped parsley. Taste and adjust seasoning if necessary.

Preparation of Herb Crostinis

Preheat Oven

Preheat the oven to 400°F (200°C).

Prepare Baguette Slices

Place the baguette slices on a baking sheet. Brush both sides lightly with olive oil.

Season and Bake

Sprinkle the chopped fresh herbs over the slices. Bake in the preheated oven for 5-7 minutes or until golden and crisp.
