Miso Marinade

Prepare the Marinade

In a bowl, mix white miso paste, mirin, sake, and brown sugar until well combined.

Marinate the Fish

Place sablefish fillets in a shallow dish and pour the miso marinade over them. Cover and refrigerate for at least 1 hour, preferably overnight.

Sesame Quinoa

Cook the Quinoa

Rinse quinoa under cold water. In a pot, combine quinoa and water, bring to a boil. Reduce heat, cover, and simmer for 15 minutes. Remove from heat and let sit for 5 minutes, then fluff with a fork.

Add Flavor

Stir in sesame oil, toasted sesame seeds, and salt.

Sauté the Vegetables

In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute.

Add Remaining Vegetables

Add mushrooms, edamame, and kale to the skillet. Sauté for 5-7 minutes until tender. Add soy sauce and stir to combine.

Sweet Soy Drizzle

Prepare the Drizzle

In a small saucepan, combine soy sauce, brown sugar, and water. Bring to a simmer over medium heat, stirring until sugar dissolves. Cook for 5-7 minutes until slightly thickened.

Cooking the Fish

Cook the Sablefish

Preheat the oven to 400°F (200°C). Remove the sablefish from the marinade, letting excess drip off. Place on a baking sheet lined with parchment paper. Bake for 15-20 minutes or until the fish is opaque and flakes easily.
