Prepare the Prawns

Boil the Prawns

In a large pot, bring water to a boil. Add salt and juice from half the lemon. Carefully add the jumbo tiger prawns and cook for about 3-4 minutes or until they turn pink and opaque. Remove from heat and plunge into ice water to stop cooking. Drain and set aside.

Once the prawns are cooled, peel and devein them, leaving the tails on for presentation. Place them in the refrigerator to chill until ready to serve.
