Sauté the Base

In a large pot, heat the olive oil over medium heat. Add the onions and red bell pepper, and sauté until softened, about 5 minutes. Stir in the garlic and cook for another minute.

Add the Liquids

Add the diced tomatoes (with their juice), fish stock, white wine, bay leaves, salt, black pepper, and crushed red pepper flakes. Bring to a simmer.

Add Seafood

Once the broth is simmering, add the clams and mussels. Cover the pot and cook for about 5 minutes, or until they start to open.

Finish with Other Seafood

Add the calamari, scallops, jumbo prawns, and fish fillets. Cook for an additional 5-7 minutes until all seafood is cooked through and tender.

Garnish and Serve

Remove bay leaves, stir in fresh parsley, and adjust seasoning if needed. Serve hot with crusty bread.
