1. Prepare the Oysters

Rinse the fresh oysters under cold water. Carefully shuck the oysters, removing the meat from the shells. Pat them dry with paper towels.

2. Prepare the Breading

In a shallow bowl, mix together the flour, cornmeal, salt, black pepper, and cayenne pepper. In another bowl, whisk together the egg and milk.

3. Bread the Oysters

Dip each oyster first into the egg mixture, allowing any excess to drip off, then dredge in the flour-cornmeal mixture until well coated.

4. Fry the Oysters

In a deep skillet or fryer, heat the vegetable oil to 350°F (175°C). Carefully add the breaded oysters in batches, frying until golden brown, about 2-3 minutes per side. Remove with a slotted spoon and drain on paper towels.

5. Serve

Serve the crispy fried oysters hot with Joe’s classic tartar sauce on the side.
