Prepare Aïoli

Make the Sun-Dried Tomato Aïoli

In a bowl, combine mayonnaise, chopped sun-dried tomatoes, minced garlic, lemon juice, salt, and pepper. Mix well until smooth. Adjust seasoning to taste. Cover and refrigerate until ready to serve.

Prepare Calamari

Prepare the Calamari

In a large bowl, combine all-purpose flour, cornstarch, salt, black pepper, and paprika. Mix well.

Coat the Calamari

Dredge calamari rings in the flour mixture, shaking off any excess.

Heat Oil

In a deep pot or fryer, heat oil to 375°F (190°C).

Fry Calamari

Fry the calamari in batches for about 2-3 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Serve

Plate and Garnish

Serve crispy calamari hot with the sun-dried tomato aïoli on the side. Garnish with chopped parsley and lemon wedges.
