Method
Fritters Preparation
Mix the Fritter Ingredients
In a large bowl, combine the crab meat, corn, flour, green onions, Cajun seasoning, beaten eggs, milk, baking powder, salt, and black pepper. Mix until well combined.
Form the Fritters
Using your hands or a scoop, form the mixture into small patties, about 2 inches in diameter.
Heat Oil
In a large skillet, heat oil over medium-high heat until shimmering.
Fry the Fritters
Carefully add the patties to the skillet, frying in batches if necessary. Cook for about 3-4 minutes on each side or until golden brown. Remove and drain on paper towels.
Roasted Jalapeno Aïoli Preparation
Combine Aïoli Ingredients
In a small bowl, mix together the mayonnaise, minced roasted jalapeño, minced garlic, lemon juice, and salt. Adjust seasoning to taste.
Serve
Serve the crab and corn fritters warm with the roasted jalapeño aïoli on the side.
