Roasted Seasonal Vegetables

Prepare vegetables

Preheat oven to 220°C (425°F). Wash and dry all vegetables. Cut harder vegetables (carrots, beets, potatoes, squash) into roughly 2–3 cm pieces so they roast in the same time as softer ones. Cut softer vegetables (zucchini, bell peppers, mushrooms, asparagus) to similar bite-sized pieces. Keep similar-size pieces together so they cook evenly.

Par-cook dense vegetables

If using very dense roots (beets, large potatoes), parboil in salted water for 6–8 minutes until just starting to tenderize, then drain and cool briefly. This ensures even roasting with softer vegetables.

Toss with oil and seasonings

In a large bowl, combine 3 tbs extra-virgin olive oil, 1 tbs melted butter, minced garlic, thyme, rosemary, lemon zest, lemon juice, 1.5 tsp sea salt and 1 tsp black pepper. Add the prepared vegetables and toss until evenly coated. Taste one piece (careful if hot) and adjust salt or lemon if needed.

Arrange on baking sheet

Spread the vegetables in a single layer on one or two rimmed baking sheets. Do not overcrowd — use two trays if necessary so vegetables roast rather than steam. For faster-roasting vegetables (mushrooms, asparagus), place them on the sheet with similar items so they can be removed earlier if needed.

Roast

Roast in the preheated oven for 20–30 minutes, stirring and rotating pans halfway through. Roast until vegetables are tender and nicely browned at the edges. If some pieces finish earlier (soft vegetables), remove them to avoid overcooking and return the rest to finish roasting.

Finishing & Garnish

Finish with butter and herbs

When vegetables are roasted, transfer them to a large serving bowl. Immediately add the remaining 1 tbs butter (if not already used) or a drizzle of olive oil and toss gently to coat and melt the butter into the vegetables. Stir in chopped parsley.

Add optional toppings

Scatter toasted pine nuts or chopped toasted almonds over the top for crunch and sprinkle grated Parmesan if using. Taste and finish with a pinch of flaky sea salt if desired.

Serve

Serve hot or warm as a side dish. Leftovers keep well refrigerated for 3–4 days and reheat in a 200°C (400°F) oven for 8–10 minutes to refresh the texture.
