Place the bottle of Smithwick's in the refrigerator for at least 90 minutes to reach approximately 4–7°C (39–45°F). If you are short on time, place it in an ice-water bath for 20–30 minutes.

Chill beer

Choose a clean, tall pint glass (non-tempered is fine). Rinse the inside of the glass briefly with cold water (about 50 ml) to lower the glass temperature and remove dust. Do not overfill — a quick rinse is sufficient.

Select and chill glass

Open the bottle carefully using a bottle opener. Hold the bottle upright to avoid excessive agitation and large foamy head.

Open beer

Tilt the chilled pint glass at about 45 degrees. Pour the Smithwick's slowly down the side of the glass until it is about two-thirds full. Then gradually tilt the glass upright and continue pouring down the middle to form a 1–1.5 cm (about 0.5 in) creamy head. Total pour should take about 15–20 seconds to minimize excessive carbonation release.

Pour

Allow the beer to settle for 10–20 seconds so the head stabilizes. Optionally, garnish with a light lemon or orange twist held over the glass and expressed once quickly, then discard or drop it in per preference. Serve immediately.
