Chill both beers briefly in the refrigerator so they're cold but not slushy. Choose a clear pint glass (16–20 oz) so you can see the layered effect. Make sure the glass is clean and dry.

Chill and select glassware

Tilt the glass to about 45 degrees and pour the pale ale or lager first. Fill the glass to roughly half to slightly more than half full (about 6–8 oz in a 12–16 oz glass). This lighter beer forms the bottom layer of the Black & Tan.

Pour the base beer

Allow the pale beer to settle for a few seconds. Position a bar spoon (convex side up) just above the surface of the pale beer with the handle touching the glass rim. If you have a specialized Black & Tan spoon, use it; otherwise a regular spoon works.

Slow the pour for the top

Open the Guinness can/bottle and gently pour the stout slowly over the back of the spoon so it trickles down the inside of the glass. Pour until the glass is about three-quarters full, leaving room for the stout's head (approximately 4–6 oz of Guinness for a 12–16 oz glass). Pouring slowly and using the spoon encourages the denser dark stout to float on top of the lighter beer, creating the classic layered look.

Pour Guinness to create layers

Let the drink sit for 10–20 seconds so the layers are distinct and the stout's creamy head forms. Do not stir. Serve immediately with the spoon removed. Optionally provide a straw or let guests drink from the glass directly.
