Method
Prep cheese
If using a block of mozzarella, cut into 12 uniform sticks about 3–4 inches long and 1/2–3/4 inch thick. Pat sticks dry with paper towels to remove surface moisture; this helps prevent early melting during frying.
Prepare breading station
Place the flour in a shallow bowl or plate. In a second shallow bowl, whisk together the eggs and milk until smooth. In a third shallow bowl, combine breadcrumbs, grated Parmesan, Italian seasoning, garlic powder, onion powder, salt, and pepper; mix well.
If using cornstarch: toss each dried mozzarella stick lightly in cornstarch before dredging in flour—this creates an extra-dry surface for the breading to adhere to.
Bread the mozzarella
Working one at a time, dredge a mozzarella stick in flour (tap off excess), then dip into the egg mixture, letting excess drip back into the bowl, then press firmly into the breadcrumb mixture to coat all sides. For a thicker, sturdier coating, return the coated stick to the egg mixture and breadcrumb mixture for a double coat.
Place breaded sticks on a baking sheet lined with parchment or a wire rack and freeze uncovered for at least 30 minutes (recommended 45–60 minutes) to firm up. Freezing prevents the cheese from melting too quickly during frying.
Heat oil
Pour oil into a heavy-bottomed pot or deep fryer to a depth of about 2–3 inches (enough to fully submerge the sticks). Heat over medium-high heat until oil reaches 350°F (175°C). If you don't have a thermometer, test by dropping a few breadcrumbs into the oil—the oil should sizzle steadily and breadcrumbs should brown in about 45–60 seconds.
Fry mozzarella sticks
Fry sticks in small batches (3–4 at a time, depending on pot size) to avoid overcrowding. Carefully lower frozen breaded sticks into the hot oil using a slotted spoon or spider.
Fry for 60–90 seconds, turning as needed, until golden brown and crisp. Do not overcook; long cooking will cause cheese to leak. Aim for a uniform light–deep golden color.
Remove with a slotted spoon and drain on a rack or paper towels. If desired, keep warm in a 200°F (95°C) oven on a wire rack while frying remaining batches.
Sauce and finish
Warm the marinara sauce in a small saucepan over low heat until heated through, stirring occasionally.
Transfer fried mozzarella sticks to a serving plate. Sprinkle with chopped parsley and extra grated Parmesan if using. Serve immediately with warm marinara sauce for dipping.
