Method
French toast base
Make the custard
In a wide shallow bowl or baking dish, whisk together the eggs, whole milk, heavy cream, granulated sugar, vanilla extract, ground cinnamon, and salt until well combined and slightly frothy.
Soak the bread
Preheat a large skillet or griddle over medium heat. Working in batches, dip each slice of bread into the custard for about 15–20 seconds per side, pressing gently so the bread soaks but does not fall apart. Let excess drip off.
Cook the French toast
Add 1 tablespoon of butter to the hot skillet per 2–3 slices. Place soaked bread in the skillet and cook 3–4 minutes per side until deep golden brown and set, adding more butter as needed between batches. Keep finished slices warm on a baking sheet in a 200°F (95°C) oven while you finish remaining slices.

Prepare bananas
Peel bananas and slice them on the diagonal into 1/2-inch-thick slices. Set aside.
Make the caramel sauce
In a large skillet over medium heat, melt 4 tablespoons of butter. Add the light brown sugar and stir until it dissolves and begins to bubble, about 2 minutes. Stir in the lemon juice, vanilla extract, and cinnamon.
Cook the bananas
Add the banana slices to the skillet and gently toss to coat. Cook for 1–2 minutes on each side until they soften and are warmed through but not mushy.
Flambé (optional) or deglaze
Remove the skillet from heat briefly. Carefully add the dark rum and, if you are comfortable and have a long lighter, ignite the rum to flambé until the flames subside (about 10–15 seconds). If not flambéing, return skillet to medium-low heat and stir the rum in, letting it reduce for 30–60 seconds. The sauce should be glossy and slightly thickened. Taste and adjust seasoning.
Finishing & garnish
Assemble
Place 2 slices of French toast per serving on plates. Spoon a generous portion of the warm Bananas Foster (bananas and caramel sauce) over the top of the French toast.
Add syrup and berries
Drizzle each plate with about 1–2 tablespoons maple syrup (adjust to taste). Scatter mixed berries around the toast for freshness and color.
