Dough & Base

Method

Dough & Base

  1. 1

    Preheat oven

Place a pizza stone or heavy baking sheet in the oven on the middle rack and preheat to 500°F (260°C) for at least 45 minutes. If you have a convection setting, use it to help crisp the crust.

  2. 2

    Prepare sauce

In a small bowl, combine crushed tomatoes, olive oil, salt, black pepper, and dried oregano. Stir until blended. Taste and adjust seasoning.

  3. 3

On a lightly floured surface, stretch or roll the pizza dough into a 12-inch round. Sprinkle the pizza peel or baking sheet with cornmeal or semolina to prevent sticking, then transfer the stretched dough to the peel/sheet.

  4. 4

Spread the tomato sauce evenly over the dough, leaving a 1/2–3/4-inch rim for the crust.

Cheese & Toppings

  1. 5

Cook the sausage and bacon: Heat a skillet over medium-high heat. Remove sausage from casings if desired and break into small crumbles. Cook sausage until browned and cooked through, about 6–8 minutes. Transfer to paper towels to drain. In the same skillet, cook bacon until crisp but not overly hard, about 6–8 minutes. Drain on paper towels and then chop into bite-size pieces.

  2. 6

Assemble meats on pizza: Evenly distribute shredded mozzarella over the sauced dough. Arrange salami slices over the cheese, scatter the cooked sausage crumbles and chopped bacon evenly. Distribute thinly sliced red onion across the top so it roasts and softens.

  3. 7

Bake the pizza: Slide the pizza onto the preheated pizza stone or baking sheet. Bake at 500°F (260°C) for 8–12 minutes, until the crust is golden and charred in spots, cheese is melted and bubbling, and toppings are cooked. Check at 8 minutes and rotate if necessary for even browning.

Finishing & Serving

  1. 8

Finish with hot honey: Remove pizza from oven and transfer to a cutting board. While hot, drizzle hot honey evenly over the pizza — start with about 2 tablespoons and add more to taste. The heat of the pizza will help the honey spread slightly.

  2. 9

Add crispy garlic and basil: Sprinkle crispy garlic chips over the pizza for crunchy garlic flavor. Tear fresh basil leaves and scatter on top, if using.

  3. 10

Slice and serve: Let the pizza rest 2–3 minutes, then slice into 6–8 pieces. Serve immediately with extra hot honey on the side.
