Slice and dry

Pat the cleaned calamari tubes and tentacles very dry with paper towels. If tubes are whole, slice into 1/2-inch rings. Trim and leave bite-sized tentacle clusters. Drying thoroughly helps the breading adhere and prevents oil splatter.

Season calamari lightly with 1 tsp salt and 1 tsp black pepper, toss to coat evenly. Let rest 5 minutes while preparing breading.

Breading

In a shallow bowl or rimmed plate combine 1 cup all-purpose flour, 1/4 cup fine cornmeal or semolina (if using), 1/2 tsp salt, 1/2 tsp paprika, 1/2 tsp garlic powder and 1/4 tsp white pepper or cayenne. Mix thoroughly so spices are even.

If using the wet batter for a slightly thicker, crispier coating: in a separate bowl whisk 1 egg with 1/2 cup milk (or buttermilk) and 1 tbsp lemon zest. For a classic dry dredge, skip the wet batter and proceed to dredging in the flour mixture only.

Set up a dredging station: one plate for wet batter (or plain milk/egg), one for the seasoned flour mixture, and a tray lined with a rack or paper towels for finished dredged rings. Work in small batches to avoid clumping.

Dredging

For dry-dredge method: toss a handful of calamari pieces into the seasoned flour, shake off excess, and place on the tray. For wet-then-dry method: dip pieces into the egg/milk batter, let excess drip off, then dredge in the flour mixture, pressing gently so the coating adheres. Shake off excess flour to avoid heavy lumps.

Frying

Pour about 3–4 cups neutral oil into a heavy-bottomed pot or Dutch oven so oil depth is approximately 2–3 inches. Heat oil over medium-high until it reaches 350°F (175°C). If you don’t have a thermometer, test by dropping a small pinch of flour: it should sizzle steadily and float up.

Fry calamari in small batches (about a single layer, 6–8 pieces depending on pot size) for 60–90 seconds, stirring gently—calamari cooks very quickly. Fry until the coating is golden and crisp. Do not overcrowd the oil or the temperature will drop and coating will absorb oil.

Use a slotted spoon or spider to transfer fried calamari to a wire rack or paper towel-lined tray. Immediately season with a light pinch of salt while still hot. Repeat with remaining calamari, allowing oil to return to 350°F between batches.

Finish & serve

If you prefer, briefly reheat the fried calamari in a 375°F (190°C) oven for 2–3 minutes before serving to ensure crispness when serving a large batch.

Arrange calamari on a platter, garnish with chopped parsley and lemon wedges. Serve hot with marinara or aioli for dipping.
