Method
Prepare Leaves
Rinse the grape leaves under cold water to remove excess brine. Fill a wide shallow pot with enough water to cover leaves, add 1 tsp salt, bring to a simmer and blanch leaves in small batches for 20–30 seconds until softened and bright green. Transfer to a bowl of cold water to stop cooking. Pat dry and remove any tough stems; set aside.
Make the Stuffing
Simmer rice
Add 3/4 cup water or low-sodium vegetable stock to the pan, bring to a gentle simmer, cover, and reduce heat to low. Cook until most of the liquid is absorbed and rice is just shy of fully cooked, about 10–12 minutes (it will finish cooking inside the leaf). Remove from heat and let cool slightly, 5 minutes.
Combine herbs and season
Transfer the warm rice to a mixing bowl. Stir in chopped parsley, dill, mint, lemon zest, toasted pine nuts (if using), 1 1/4 tsp salt and 1/2 tsp black pepper. Taste and adjust seasoning — mixture should be well seasoned since it’s a filling. Let the mixture cool until comfortable to handle.
Assemble Dolmades
Prepare a work surface. Lay one grape leaf shiny-side down and stem end facing you. Place about 1 to 1 1/2 teaspoons (heaped) of the rice mixture near the stem end, roughly 3/4 inch from the edge. Do not overfill — rice expands.
Fold the bottom (closest to you) of the leaf over the filling, fold the two sides in toward the center, then roll firmly away from you to form a neat cigar/oval. Repeat with remaining leaves and filling. Keep rolls snug but not overly tight so rice can expand.
If you have leftover scraps or small leaves, use them to wrap or tuck into gaps in the pot when stacking the dolmades.
Cook Dolmades
Add enough hot water to come about 1/2 inch (1–1.5 cm) below the top layer of dolmades (do not cover them completely). Bring the pot to a gentle simmer over medium heat, then reduce heat to low, cover, and cook gently for 35–45 minutes until leaves are tender and rice is fully cooked.
Turn off the heat and let dolmades cool in the pot with the lid on for at least 20–30 minutes to set. This helps them firm up and hold shape.
Finish & Serve
Carefully remove the plate and transfer dolmades to a serving platter. Drizzle a little more olive oil and additional lemon juice if desired.
