Chill glassware and ingredients

Place champagne flutes and both the sparkling wine and orange juice in the refrigerator for at least 30 minutes so everything is well chilled. Cold ingredients preserve carbonation and keep the drink crisp.

Prepare garnish

If using garnishes, cut 4 thin orange twists or small segments and set them aside on a plate.

Combine juice and sparkling wine

Pour 1/2 cup (120 ml) chilled freshly squeezed orange juice into each chilled champagne flute. Slowly top each flute with 1/2 cup (120 ml) chilled sparkling wine poured down the side of the glass to preserve bubbles. Do not stir; allow gentle mixing.

Adjust sweetness (optional)

If you prefer a slightly sweeter Mimosa or your oranges are very tart, add 1/8 teaspoon simple syrup to each flute and let it settle briefly before topping with sparkling wine. Stirring is generally unnecessary.

Garnish and serve

Garnish each flute with an orange twist or a small orange segment on the rim. Serve immediately while bubbly.

Optional additions

For a more complex flavor, add 1/2 tablespoon orange liqueur to the orange juice in each glass before topping with sparkling wine. Skip the additional simple syrup if using liqueur, or reduce to taste.
