Split and toast
Slice the everything bagel in half horizontally. Toast both halves in a toaster or under a broiler until golden and slightly crisp, about 2–4 minutes depending on your appliance.
Spread 1 tablespoon of softened butter or cream cheese evenly on the cut side of each toasted bagel half. Set aside, cut sides up.
Protein
Prepare your chosen protein: If using bacon, cook 2 strips in a skillet over medium heat until crisp, 6–8 minutes, turning as needed; transfer to a paper towel to drain and keep warm. If using pre-cooked sausage patty, reheat in the pan 2–3 minutes per side until hot. If using deli ham, warm 1–2 minutes in the pan or microwave 15–20 seconds until heated.
Keep the cooked protein warm on a plate while you make the eggs so the sandwich assembles hot.
Eggs & Assembly
Beat the egg
In a small bowl, crack 1 large egg and add 1 tablespoon milk or water, 1/4 teaspoon black pepper and a pinch of the 1 teaspoon salt (about 1/4 teaspoon). Whisk until combined and slightly frothy.
Cook scrambled egg
Heat a nonstick skillet over medium-low heat and add 1 teaspoon butter or oil. Pour in the beaten egg. Let it sit undisturbed 10–15 seconds, then gently stir with a spatula, folding the egg from the edges to the center. Cook until soft-curded but fully set, about 1–2 minutes. Remove from heat just before fully dry — residual heat will finish it.
Place the bottom toasted bagel half (butter/cream cheese side up) on a plate. Layer the warm protein (bacon, ham or sausage) evenly over the spread. Add the scrambled egg on top of the protein, spreading to cover the surface.
Serve
Cut the sandwich in half if desired and serve immediately while hot.
Leftovers: wrap cooled sandwich and refrigerate up to 2 days. Reheat in a toaster oven or skillet until warmed through.
