    Blanch the beef shank

    Place beef shanks in a large pot and add enough cold water to cover (about 6 cups). Bring to a rolling boil over high heat and boil for 8 minutes to remove impurities. Drain and rinse the shanks under running water. Rinse the pot to remove residue.

    Char aromatics

    While the beef is blanching, place the halved onion and smashed ginger directly on a gas burner or in a dry skillet over medium-high heat and char until browned and fragrant on the cut sides (about 4–6 minutes). This deepens the broth flavor.

    Toast spices

    In the same dry skillet, toast star anise, cinnamon stick, Sichuan peppercorns and cloves over medium heat for 1–2 minutes until aromatic, shaking the pan to avoid burning. Remove from heat.

    Simmer the broth

    Return the cleaned beef shanks to the rinsed pot. Add 5 cups fresh water and 4 cups beef stock (total ~9 cups). Add charred onion, charred ginger, toasted spices, crushed garlic, rock sugar, light soy sauce, dark soy sauce (if using) and 1 teaspoon of the salt. Bring to a gentle boil, then reduce to a low simmer. Partially cover and simmer gently for 2 to 2 1/2 hours, until beef is tender and the marrow has begun to release into the broth. Skim foam occasionally.

    Finish and season broth

    When the beef is tender, remove the shanks and set aside to rest. Strain the broth through a fine-mesh sieve into a clean pot to remove solids and spices. Taste and add remaining 1 teaspoon salt, fish sauce, white pepper and sesame oil; adjust to taste. Keep broth hot over low heat.

    Shred beef

    When cool enough to handle, remove meat from bones and slice or shred into bite-sized pieces. Reserve any gelatinous bits and marrow for adding to bowls for extra richness.

    Prepare noodles according to package instructions: typically soak wide dried rice noodles in warm water for 20–30 minutes until pliable, then briefly blanch (10–30 seconds) in boiling water to heat through and separate. If using fresh rice noodles, briefly blanch to loosen. Drain and divide among serving bowls.

    Blanch greens and bean sprouts: bring a separate pot of water to a boil, add bok choy or gai lan and blanch 30–45 seconds until bright green and just tender. Remove with tongs and divide among bowls. Quickly blanch bean sprouts for 10–15 seconds if you prefer them warmed, or leave raw for crunch.

    Heat broth to a vigorous simmer. For each serving, arrange a portion of cooked rice noodles in a bowl, add a handful of shredded beef (and bits of marrow if used), place blanched greens and bean sprouts alongside, and ladle 2 to 2 1/2 cups of hot beef broth over the noodles to warm everything through.

    Garnish each bowl with sliced green onions, chopped cilantro, Thai basil leaves (if using), sliced fresh chilies or a drizzle of chili oil. Serve with lime wedges and additional fish sauce or soy on the side so diners can adjust seasoning.
