Onions

    Peel the onions and slice into 1/2-inch to 3/4-inch thick rings. Separate into individual rings and set aside. If you prefer milder rings, place sliced rings in a bowl with the buttermilk and refrigerate for 30 minutes; drain thoroughly and pat dry with paper towels before proceeding.

Pretzel Crust

    Place the soft pretzels or pretzel nuggets in a food processor and pulse to a coarse breadcrumb texture (aim for pieces about the size of coarse sand to small pebbles). Transfer to a shallow bowl.

    Add 1/2 cup grated Parmesan, 1 tsp garlic powder, 1 tsp dried crushed thyme, 1/2 tsp smoked paprika and 1/2 tsp salt to the crushed pretzels. Stir to combine well. Taste a pinch; adjust salt if your pretzels are very low in salt.

Batter & Dredging

    In a mixing bowl whisk together 1 cup all-purpose flour, 1/4 cup cornstarch, 1 tsp baking powder, 1 tsp salt and 1/2 tsp black pepper until evenly combined.

    In a separate bowl whisk the cold sparkling water and 2 large eggs until smooth. Gradually whisk the wet mixture into the dry ingredients until a smooth, slightly thick batter forms. If batter is too thick, add 1–2 tbsp more sparkling water; it should coat the back of a spoon.

    Set up a dredging assembly: bowl with flour batter, bowl with the pretzel-Parmesan crumbs, and a tray for finished rings.

Frying & Finishing

    Pour oil into a deep-sided pot or Dutch oven to a depth of about 2 inches (approximately 3–4 cups depending on vessel). Heat oil to 350°F (175°C). If you don’t have a thermometer, test by dropping a small pinch of batter into the oil — it should sizzle and rise steadily without burning immediately.

    Working in batches to avoid overcrowding, dip an onion ring into the batter to coat, allowing excess to drip back into the bowl. Press the battered ring into the pretzel-Parmesan crumbs, turning to coat thoroughly and pressing lightly so crumbs adhere. Shake off excess and transfer to a wire rack while you finish breading a few more.

    Carefully lower 4–6 rings at a time (depending on pot size) into the hot oil. Fry until golden brown and crisp, about 2.5–3.5 minutes, turning once with tongs or a slotted spoon for even coloring. Adjust heat as needed to maintain 350°F.

    Remove rings to a paper towel-lined baking sheet. Sprinkle with 2 tbsp grated Parmesan and a pinch of fresh thyme leaves while still hot. Keep finished rings in a warm oven (200°F / 95°C) on a wire rack if frying in multiple batches so they remain crisp.

Dipping Sauces

    Mustard-Thyme Dip

    Whisk together 1/4 cup Dijon mustard, 1/4 cup mayonnaise, 1 tbsp honey, and 1 tsp minced fresh thyme. Stir in 1 tsp minced garlic. Taste and adjust honey or salt as needed. Chill until serving.

    Parmesan Garlic Dip

    Combine 1/4 cup Greek yogurt (or sour cream), 2 tbsp grated Parmesan and 1 tsp minced garlic. Whisk until smooth. Add a pinch of salt and pepper and refrigerate for at least 10 minutes to let flavors meld.

    Savory Steak Sauce Dip

    In a small bowl mix 1/4 cup steak sauce with 1 tsp hot sauce (optional) and, if desired, 1 tsp minced garlic. Taste and adjust heat or tang. This provides a robust, savory counterpoint to the salty pretzel crust.
