Octopus & Braising Liquid

    Tenderize & Clean

    Rinse the cleaned octopus under cold water. If it still has the beak or ink sac, remove them. (If frozen, thaw completely; freezing helps break the muscle fibers.)

    Simmer the Octopus

    In a large pot, combine the white wine, water, bay leaves, crushed garlic, peppercorns and 2 tsp kosher salt. Bring to a gentle simmer over medium heat. Submerge the octopus, reduce heat so the liquid barely simmers, cover partially, and poach until tender when pierced with a skewer: about 40–60 minutes for a 1 kg octopus. Check at 30–40 minutes; cooking time varies with size. Do not boil vigorously or the tentacles will toughen.

    Cool in Liquid

    When tender, remove the pot from heat and let the octopus cool in the braising liquid for 20 minutes to retain moisture and flavor. Reserve 150–200 ml of the braising liquid for finishing the vegetables and sauce; discard the rest or reserve for another use.

    Once cool enough to handle, cut the head open and remove any remaining cartilage. Separate tentacles from the body and cut into 3–4 cm pieces. Pat dry with paper towels; set aside.

Vegetables & Accents

    Prepare Potatoes

    Place the halved potatoes in salted cold water, bring to a simmer, and cook until just tender, 10–12 minutes depending on size. Drain and set aside.

    Blanch Fiddleheads

    Bring a medium pot of salted water to a boil. Add fiddleheads and blanch for 2–3 minutes until bright green and tender-crisp. Immediately transfer to an ice bath to stop cooking. Drain and pat dry.

    Sauté Cabbage

    In a large skillet, heat 2 tbs olive oil and 1 tbs butter over medium heat. Add sliced cabbage, a pinch of salt and cook, stirring occasionally, until softened and lightly caramelized, about 6–8 minutes. Add 2–3 tablespoons of the reserved braising liquid and 1 tsp Calabrian chili to deglaze and flavor; cook for another 1–2 minutes until liquid is mostly evaporated. Transfer cabbage to a bowl and keep warm.

    Pan-Roast Potatoes & Fiddleheads

    In the same skillet, add remaining 2 tbs olive oil and heat until shimmering. Add drained potatoes cut-side down and sear until golden, 4–5 minutes. Add blanched fiddleheads and toss for 1–2 minutes to warm through. Add reserved braising liquid (about 2–3 tbs) and 1 tbs butter, swirling until the butter emulsifies into a light sauce that coats the potatoes and fiddleheads. Season with sea salt and freshly ground black pepper to taste.

    If you prefer spice, stir in an additional 1/2–1 tsp Calabrian chili or some chili flakes here.

Finishing & Assembly

    Sear Octopus

    Heat a separate heavy skillet or grill pan over high heat until very hot. Add 1 tbs olive oil. Sear the octopus pieces in a single layer (do not overcrowd) until they develop a golden-brown char on the edges, about 1–2 minutes per side. This adds texture and flavor after the gentle braise.

    Combine & Finish

    Return the seared octopus to the skillet with the potatoes and fiddleheads, add the sautéed cabbage, chopped parsley, the zest and juice of 1 lemon, and toss gently to combine and warm through for 1 minute. Taste and adjust salt, pepper and Calabrian chili level. If the dish needs a touch more moisture, splash 1–2 tbs reserved braising liquid or a drizzle of olive oil.

    Plate & Serve

    Divide the cabbage-vegetable mix among plates, arrange octopus pieces on top. Finish with a drizzle of finishing olive oil, an extra sprinkle of chopped parsley, a light grind of black pepper, and lemon wedges on the side. Serve immediately.
