Canapés (bite-sized appetizers)

Prepare cream cheese spread
In a medium bowl, combine the softened cream cheese, chopped dill, lemon zest and freshly ground black pepper. Mix until smooth and well incorporated. Taste and adjust salt or lemon zest as desired.

Assemble canapés
If using baguette rounds, toast them briefly under a broiler or in a toaster oven until lightly golden (about 5 minutes). Place a teaspoon of the cream cheese mixture on each toasted round or blini. Top each with a small fold of smoked salmon. Garnish with a caper or two (or scatter caper halves across several pieces) and a small sprig of dill. Finish with a tiny squeeze of lemon if desired.

Keep assembled canapés chilled on a tray covered loosely with plastic wrap until serving. Assemble no more than 1 hour ahead to preserve bread/crispness.

Prep salad ingredients
Wash and thoroughly dry the baby greens and microgreens. Halve the cherry tomatoes and dice the cucumber. Toast the walnuts in a dry skillet over medium heat for 3–4 minutes until fragrant; cool and chop roughly.

Dress and portion
In a large bowl, gently toss the mixed greens, cherry tomatoes, cucumber, and toasted walnuts with the balsamic vinaigrette so everything is lightly coated. Taste and adjust seasoning if needed. Spoon the dressed salad into 8–10 clear shooter glasses or small cups, filling each 3/4 full. Sprinkle crumbled goat cheese on top and garnish with microgreens or herbs.

Keep shooters refrigerated until service. Add goat cheese and microgreens just before serving to maintain presentation.

Arrange canapés, salad shooters, and mini sweets on separate platters or a tiered serving stand for an elegant presentation. Place lemon wedges and a small dish of extra capers on the canapé tray. Sprinkle a pinch of coarse sea salt on plates where appropriate. Serve chilled items on trays over ice if the event is warm or will be outdoors.

Timing: set out canapés and salad shooters about 10–15 minutes before guests arrive so they are fresh and ready; replenish as needed throughout the event.
