Cheeses

Method

Cheeses

1

Bring cheeses to temperature

Remove all cheeses from refrigeration 30–60 minutes before serving so they come to room temperature; this enhances flavor and texture.

2

Prepare brie

Place the whole brie on the board. If desired, score the top lightly in a cross-hatch or leave whole. Provide a small knife for spreading.

3

Slice and portion firmer cheeses

Cut the aged cheddar and Manchego into a combination of wedges and bite-size cubes to encourage sampling. Arrange some slices fanned and leave some larger wedges for visual interest. Crumble or break the blue cheese into small chunks and place in a small bowl if very crumbly.

Fruits

4

Wash and dry

Rinse all fresh fruit (grapes, berries, figs, apples, pears) and pat dry thoroughly to prevent watery juices on the board.

5

Prepare grapes and berries

Keep grapes on small stems or separate into small clusters. Trim away any brown stems. Arrange berries in small clusters or bowls to avoid crushing.

6

Slice apples and pears

Core and thinly slice apples and pears just before serving. Toss slices briefly in a small bowl with the juice of half the lemon (about 1 tsp) if you want to prevent browning; drain any excess juice so slices are not wet.

7

Prepare figs and dried fruit

Halve fresh figs if using and arrange cut-side up. Place dried apricots in a small pile or dish to keep them from sliding.

Accoutrements & Assembly

8

Choose board and layout

Select a large wooden board or platter. Place bowls for jam, blue cheese (if used in a bowl), and nuts first to anchor the layout. Leave space between bowls for cheeses and fruit.

9

Arrange cheeses

Position the four cheeses evenly around the board, leaving space between each for fruit and crackers. Place knives or spreaders next to each cheese type.

10

Fill with fruit

Tuck clusters of grapes and small piles of berries around and between cheeses, filling negative space but avoiding overcrowding. Fan apple and pear slices near complementary cheeses (apples with cheddar, pears with blue cheese or manchego). Place fig halves near brie or blue cheese.

11

Add crackers, bread, nuts, and preserves

Arrange crackers and toasted baguette slices in small stacks or leaning against cheeses. Spoon fig jam or preserves into a small bowl and place near softer cheeses. Scatter mixed nuts in little piles around the board.

12

Finish with honey and garnish

Drizzle honey into a small ramekin or serve in a honey dipper alongside the brie. Garnish with sprigs of rosemary or thyme for aroma and visual contrast.

13

Serve

Provide small plates, napkins, and cheese markers (optional). Suggest pairings: crisp apple or pear with cheddar, fig with Manchego, honey with brie, and a bite of blue cheese with pear or fig jam. Keep the display at room temperature and replenish as needed.
