Egg Base

    Prepare egg mixture

    Crack 12 large eggs into a large mixing bowl. Add 1/2 cup whole milk, 1 teaspoon salt and 1/2 teaspoon black pepper. Whisk vigorously until the mixture is homogenous and slightly frothy (about 30–60 seconds). Keep refrigerated until ready to cook; whisk again briefly before using if it has rested.

    Portioning for service

    For individual omelets, portion about 3 eggs (1/4 of the base) per omelet. Keep remaining egg mix chilled in a covered bowl on ice or under refrigeration; replace frequently to maintain food safety.

Proteins (pre-cooked and ready-to-serve)

    All proteins must be fully cooked and held hot (≥140°F / 60°C) in steam table pans. Dice or crumble proteins into bite-sized pieces. Keep separate containers labeled for ham, sausage, bacon, smoked salmon and seasoned tofu. For smoked salmon and tofu, hold chilled if required by food-safety standards and clearly label.

    If offering bacon, ham or sausage from scratch: cook and drain on paper towels, then keep warm in shallow steam pans. Replenish pans as needed to keep volume for service.

Vegetable Toppings (prepped)

    Pre-sauté firmer vegetables to remove excess moisture and concentrate flavor: heat 1 tbs neutral oil in a sauté pan over medium-high heat. Add diced onions and bell peppers; sauté 4–6 minutes until softened. Add sliced mushrooms and 2 tsp minced garlic; cook 3–4 more minutes until mushrooms have released moisture and it evaporates. Season lightly with salt and pepper. Cool and transfer to holding pans.

    Keep delicate items like chopped spinach, tomatoes and sliced green onions raw and chilled in separate pans. If you prefer, wilt spinach briefly in the sauté pan (about 1–2 minutes) and drain to avoid watering down omelets.

Cheeses

    Place cheeses in shallow containers for the service line. Shredded cheeses can be used cold; crumbled cheeses (goat or feta) are best at cool/hot-hold temperatures depending on food-safety rules. Replenish as needed.

Station Setup & Cooking

    Heat the nonstick skillet or griddle over medium–medium-high heat. For an 8–10 inch skillet, add 1/2 tbs butter and a little neutral oil (about 1 tsp) to prevent burning. Test heat by flicking a few drops of water — it should sizzle immediately but not smoke.

    Cook individual omelets

    Whisk the appropriate portion of egg mixture once more. Add 1/2 tbs butter to the hot skillet and swirl to coat. Pour the 3-egg portion into the skillet, tilting to evenly distribute. Using a spatula, gently push set edges toward the center while tilting the pan so uncooked egg flows to the edges. When the top is mostly set but still slightly glossy (about 1–2 minutes), add chosen fillings: 1/4–1/3 cup proteins or vegetables, and 1/4–1/3 cup cheese. For delicate fillings (like smoked salmon or raw spinach), add them just before folding to avoid overcooking. Fold the omelet in half with the spatula and slide onto a warm plate. Garnish with chopped chives/parsley, slices of avocado, and a dollop of salsa or sour cream as requested.

    For faster service, consider a partial-cook method: cook the egg until nearly set, transfer to a small hotel pan in a 160–170°F warmer to finish briefly while assembling fillings on top, then fold and serve. Monitor texture to avoid rubbery eggs.

    Keep garnishes chilled and within easy reach. Offer hot sauce, salsa and sour cream in squeeze bottles or small bowls. Sprinkle fresh herbs over finished omelets just before serving to preserve color and flavor. Avocado should be sliced just before service to prevent browning; keep lemon wedges available if preparing slices ahead.

Holding, Safety & Service

    Hold hot items at ≥140°F (60°C). Hold cold items at ≤40°F (4°C). Replace foods that have been out for longer than 2 hours (1 hour in >90°F ambient). Keep raw ingredients separate from cooked; use clean utensils for each item and change gloves/utensils frequently. Provide clear signage so guests know which options are vegetarian, vegan, dairy-free or contain allergens.

    Estimate yields: the 12-egg base yields approximately four 3-egg omelets. Scale egg base and toppings according to expected guests. Replenish small batches frequently to maintain freshness and temperature.
