Station Essentials & Garnishes
Method
Waffle Batter
- 1
Make the batter
In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt until evenly combined.
- 2
- 3
Make a well in the center of the dry ingredients and pour the wet mixture in. Stir gently with a spatula or whisk until just combined — small lumps are okay. Do not overmix to keep waffles tender.
- 4
Let the batter rest 10 minutes at room temperature. If using the buttermilk variation, substitute buttermilk for milk 1:1 before combining.
Prepping the Station
- 5
Preheat waffle irons according to the manufacturer's instructions on medium-high heat. For a mini waffle bar, set multiple irons to keep a steady output (2–4 irons depending on guest count).
- 6
Lightly brush or spray the waffle iron grids with neutral oil or nonstick spray before the first waffle and between batches as needed to prevent sticking.
- 7
Arrange toppings in small bowls with spoons and place warmers or chafing dishes on the serving table for cooked savory toppings (bacon, sausage, cheese). Label bowls so guests can easily navigate sweet vs savory options.
Cooking Waffles
- 8
Scoop approximately 2 tablespoons (for mini waffle irons) to 1/4 cup (depending on waffle iron size) of batter onto the preheated iron. Close the lid and cook until golden brown and crisp, about 2–4 minutes per mini waffle. Timing will vary with iron and batter temperature—watch the first batch and adjust.
- 9
Use a fork or heatproof spatula to remove waffles carefully and transfer to a wire rack set over a baking sheet to keep them crisp. If holding for service, keep waffles warm in a single layer on a low oven (200°F / 95°C) or in a warm box; avoid stacking wet waffles which makes them soggy.
- 10
If preparing a large quantity ahead, freeze cooled waffles in a single layer on a sheet tray; once frozen, transfer to freezer bags. Reheat in a 375°F (190°C) oven for 6–8 minutes to crisp before serving.
Toppings — Sweet
- 11
Maple syrup and chocolate spread: place in squeeze bottles or warmers for easy dispensing. Warm chocolate spread slightly (microwave in 15–20 second increments, stirring) if thick.
- 12
- 13
Chips, sprinkles: set in small bowls for guests to garnish freely.
- 14
Bananas: slice just before service to prevent browning, or toss with a light squeeze of lemon juice if sliced in advance.
Toppings — Savory
- 15
Bacon and sausage: cook until crisp/fully cooked and keep warm in chafing dishes or low oven. Chop or slice for easy topping.
- 16
Cheese and chive sour cream: place shredded cheddar in a bowl and chive sour cream in a squeeze or dollop container. For a hot-savory option, sprinkle shredded cheddar on a hot waffle so it melts slightly.
- 17
Smoked salmon, capers, and arugula: arrange plated or in bowls. Advise guests to add arugula and a spoonful of chive sour cream, then top with smoked salmon and capers for a savory waffle.
Assembly & Service
- 18
Provide guests with small plates and tongs or forks so they can pick waffles and top as desired. Suggest popular combos: maple syrup + butter + berries; Nutella + bananas + chocolate chips; bacon + maple syrup + cheddar; smoked salmon + chive sour cream + capers + arugula.
- 19
Keep an eye on batter consistency during service — if it thickens, thin with 1–2 tablespoons milk at a time. If it separates, gently whisk to recombine.
- 20
Ensure food safety by keeping perishable toppings cold until service and discarding any toppings left at room temperature for more than 2 hours.
