Equipment & Serving
Method
Cheeses
- 1
Prepare cheeses
Remove all cheeses from refrigeration 30–45 minutes before serving to bring to room temperature. This improves flavor and texture.
- 2
Cut aged cheddar into 1/2" cubes and place in one area of the platter. Arrange manchego slices in a small fan nearby. Cut brie into 8–10 wedges and leave the rind intact; nestle brie wedges on the board with space for spreading.
- 3
Slice the goat cheese log into 1/3" rounds and position near the brie so guests can use the same knives. Crumble blue cheese into a small pile or place in a small bowl if very soft or runny.
Fresh Seasonal Fruits
- 4
Wash and prepare fruit
Rinse grapes, strawberries, figs, apples and pears under cool water. Dry thoroughly on paper towels to avoid adding moisture to the board.
- 5
Keep grapes on small clusters; trim any brown stems. Hull strawberries and halve any that are larger than bite-size.
- 6
Core and thinly slice apples and pears. Immediately toss sliced apples and pears in 2 tablespoons lemon juice to prevent browning. Arrange fruit in groups across the platter — grapes near cheeses that pair well (brie, goat), strawberries next to manchego, figs or fig jam near blue cheese.
- 7
Place dried apricots in a small pile or bowl to add chew and concentrated sweetness.
Accompaniments
- 8
Prepare accompaniments
Place mixed nuts in a small bowl or pile them on the board. Arrange crackers and crostini in several stacks or fanned sections so guests can reach them easily.
- 9
Spoon fig jam or quince paste into a small bowl and position near the blue cheese and manchego. Place honey in a small bowl or mini pitcher with a drizzle spoon and set near brie and goat cheese for drizzling.
- 10
Garnish the board with fresh herb sprigs for color and aroma. Scatter toothpicks near fruit and cheese for easy picking.
Assembly & Presentation
- 11
- 12
Fill gaps with seasonal fruits, ensuring a mix of colors and textures across the board. Use figs, strawberries and apple/pear slices to add vertical interest and layers. Tuck crackers and crostini into open spaces so they’re easy to grab.
- 13
Add small piles of dried apricots and scattered nuts to provide bite-sized contrast. Make sure cheese knives are placed next to the cheeses they’re best for (soft cheeses get spreaders).
- 14
Final touch: lightly drizzle honey over brie or goat cheese if desired, and place herb sprigs for garnish. Wipe any drips from the board edges for a clean presentation.
Service
- 15
Serve at room temperature with a selection of utensils. Replenish fruit and crackers as needed. Offer guidance on pairings (e.g., fig jam with blue cheese; honey with brie; apple/pear with cheddar).
