Glass & Garnish

Method

Glass & Garnish

  1. 1

    Prepare the rim

Pour the celery salt, coarse salt, and black pepper onto a small plate and mix evenly. Run the lemon or lime wedge around the rim of a highball or pint glass to wet it, then dip the rim into the salt-pepper mixture and twist to coat. Set the glass aside.

  2. 2

    Garnish prep

Trim the celery stalk so it fits neatly in the glass (about 6–8 inches). If using olives, pickled beans, or peppers, skewer them on a short cocktail pick. Reserve the lemon and lime wedges for serving.

Cocktail Mix

  1. 3

    Build the cocktail

Fill a cocktail shaker (or a mixing glass) halfway with ice cubes. Add 2 oz vodka, 4 oz tomato juice, 0.5 oz fresh lemon juice, 2 tsp Worcestershire sauce, 1 tsp prepared horseradish, 2 dashes hot sauce, 0.25 tsp smoked paprika, 0.125 tsp celery salt, and a pinch of freshly ground black pepper.

  2. 4

    Mix & chill

Secure the shaker lid and gently roll or shake once or twice to combine and chill (a vigorous shake will aerate the tomato juice — shaking lightly or stirring for 10–15 seconds is preferred to preserve texture).

  3. 5

    Assemble

Fill the prepared glass with fresh ice. Strain the cocktail mixture into the glass over the ice. Give the drink a gentle stir to integrate any rim salts that transferred and to chill the entire drink.

  4. 6

    Garnish & serve

Place the trimmed celery stalk into the glass along the side. Add the skewered olives/pickles if using. Serve with the reserved lemon and lime wedges on the side (squeeze to taste). Provide extra hot sauce or horseradish for guests who want more heat.
