Prepare peach puree
If using fresh peaches: peel (blanch for 15–30 seconds in boiling water and shock in ice water to loosen skins), pit and roughly chop 1 medium–large ripe peach (about 3/4 cup chopped). Place the chopped peach in a blender or food processor with 1/2 tablespoon simple syrup and 1/2 teaspoon fresh lemon juice (optional, to brighten). Pulse until smooth. If the puree is very thick, add 1–2 teaspoons of water and pulse once more. Strain through a fine-mesh sieve into a bowl if you prefer an extra-silky texture. Yield: about 3/4 cup puree.

Chill glassware
Chill a champagne flute in the freezer for 5–10 minutes or fill with ice water while preparing the puree.

Combine peach base
Measure 3 tablespoons (about 0.75 oz by volume, approximately 45 ml) — roughly 2 tablespoons plus 1 teaspoon — of the peach puree into the chilled flute or into a mixing vessel if you prefer to stir briefly. Add 1 tablespoon peach schnapps and 1/2 tablespoon simple syrup to the puree and gently stir to combine. (Adjust sweetness to taste.)

Top with sparkling wine
Slowly pour or gently stream 5 ounces of chilled Veuve Du Vernay Brut (or another dry sparkling wine) into the flute over the back of a spoon or down the side to preserve effervescence. Pour gradually to mix the puree with the sparkling wine without excessive foaming. The final drink should be lightly bubbly with peach color distributed through the wine.

Final taste and garnish
Taste and, if needed, add a tiny splash more simple syrup (1/4 teaspoon) for extra sweetness or a drop of lemon juice to brighten. Garnish with a thin peach slice or twist on the rim. Serve immediately while cold and effervescent.

Batching note (optional)
To make multiple Bellinis: combine 3 parts chilled sparkling wine to 1 part peach puree base (peach puree + small amount of schnapps and simple syrup) in a pitcher just before serving. Add sparkling wine slowly and stir gently to retain bubbles.
