    Arrange and Toast

    Arrange bagels, mini bagels, and sliced breads on platters. Keep some whole for display and pre-slice others horizontally for easy service. Toast bagels and bread shortly before the event begins: set toaster to medium and toast in batches so items are warm (about 2–3 minutes per side depending on equipment). Place toasted items on warm trays to maintain temperature.

    Reserve a selection of un-toasted bagels for guests who prefer room-temperature or toasting themselves.

Spreads & Cream Cheeses

    Prepare Spreads

    Spoon plain, chive & onion, and smoked salmon cream cheeses into individual labeled bowls. Smooth tops and garnish each with an identifying label or small sign. Soften butter and place in a bowl with a spreader. Place peanut butter, jam, and honey in separate bowls with spoons. Keep refrigerated cream cheeses chilled on a bed of ice if the station will be out for more than 30 minutes.

    Stir each spread briefly so it’s easy to spread; for smoked salmon cream cheese, fold 1–2 Tbsp of chopped smoked salmon into the cream cheese for extra flavor if desired.

    Arrange smoked salmon slices in thin, overlapping layers on a chilled platter and garnish with chopped dill and lemon wedges. Warm and chop cooked bacon; place in a bowl with tongs. Fold sliced turkey and ham into loose piles for easy pickup. Halve hard-boiled eggs and place on a platter with salt and pepper available.

    How to Build a Classic Lox Bagel (Suggested Composure)

    1) Split and toast a bagel. 2) Spread 2–3 Tbsp plain or smoked-salmon cream cheese on the bottom half. 3) Layer 2–3 slices smoked salmon, a few rings of red onion, 1–2 tsp capers, cucumber slices, and a sprinkle of chopped dill. 4) Squeeze a lemon wedge lightly and finish with black pepper. Serve immediately.

Cleanup & Storage
