Cheese Selection

    Choose and temper cheeses

    Remove all cheeses from refrigeration and leave them at room temperature for 30–60 minutes before serving. This brings out flavor and softens texture. Keep cheeses whole or in large chunks rather than pre-sliced to retain moisture and presentation.

    Prepare cheeses for serving

    Place the aged cheddar in a block or pre-slice a few thicker pieces. Place the triple-cream brie whole; score a shallow cross on top if desired for easier portioning. Crumble portions of goat cheese onto a small dish so guests can spread it. Break or crumble a small portion of blue cheese onto a separate dish to control strong flavors.

    Slice the baguette into 1/4-inch (6 mm) slices. Lightly brush one side with 1/2 tsp olive oil and toast in a 180°C (350°F) oven for 6–8 minutes until just golden and crisp. Arrange crackers on the board near cheeses that pair well with them (chevre with crackers, cheddar with seeded crackers).

    Wash grapes and leave in small clusters or single serve amounts. Halve fresh figs and arrange cut side up; if using dried figs, quarter them. Lightly toast nuts in a dry skillet over medium heat for 3–4 minutes, stirring constantly, until fragrant and slightly browned — cool before placing on the board.

    Spoon fig jam or place small slices of quince paste on the board near the blue cheese and brie. Put honey in a small ramekin for drizzling; place a small spoon in the ramekin. Arrange cornichons and a small dish of Dijon mustard on the board.

    Drizzle 1 tsp olive oil lightly over the brie if desired and scatter a few flakes of sea salt on the cheddar or brie to highlight flavors. Grind a little fresh black pepper over the goat cheese if you like. Garnish the board with rosemary sprigs for aroma.

    Assemble the board: use a wooden board or platter. Start by placing cheeses with some space between them. Add small bowls (ramekins) for honey, jam, and mustard. Arrange breads/crackers, grapes, figs, and nuts around the cheeses in small clusters. Label cheeses if serving to guests. Provide a separate cheese knife for each cheese type (hard knife for cheddar, spreader for chevre, knife for brie, small fork or spoon for blue).

    Serve immediately once cheeses are at room temperature. Refill accompaniments as needed. Estimated plating and setup time: 10–15 minutes after cheeses have tempered.
