If using whole clams: shuck clams and remove meat from the shells. Rinse clam meat under cold running water to remove grit, then pat very dry with paper towels. Slice larger clam strips to roughly 3–4 inch lengths so they fry evenly. If using pre-cut clam strips, rinse and pat thoroughly dry.

In a medium bowl whisk together milk, egg, lemon juice, 1 tsp kosher salt and 1 tsp black pepper to create the wet dredge. Add the clam strips to the milk mixture, stir to coat, and let sit 10–15 minutes in the refrigerator. This tenderizes and flavors the clams and helps the breading adhere.

While clams rest, set up a three-bowl breading station: Bowl 1 — all-purpose flour; Bowl 2 — the milk & egg clam mixture (the wet); Bowl 3 — combine cornstarch, cornmeal, panko (if using), baking powder, paprika, garlic powder, onion powder, dried thyme, cayenne, 1.25 tsp salt and 1/2 tsp black pepper. Whisk dry mix until evenly distributed.

Working in small batches to avoid crowding, remove 6–8 clam strips from the wet dredge, letting excess drip off, then dredge first through the flour to coat lightly. Shake off excess flour, return briefly to the wet mix to re-moisten, then press into the dry breadcrumb/cornmeal mix so each strip is well coated. For an extra-crispy double-coat, repeat the wet then dry step once more.

Place breaded clam strips on a wire rack set over a baking sheet. Let rest 10 minutes — this helps the coating adhere and prevents it from falling off in the oil.
Frying

Pour oil into a deep, heavy-bottomed pot or deep-fryer to a depth of 2–3 inches (about 4–6 cups depending on vessel). Heat oil to 350°F (175°C). If you don't have a thermometer, test by dropping a small pinch of the breading into the oil — it should sizzle and rise steadily without burning.

Working in 3–4 small batches (do not overcrowd), carefully lower breaded clam strips into the hot oil using tongs or a spider. Fry until golden brown and crisp, about 1.5–2.5 minutes per side depending on size; total fry time roughly 3–5 minutes per batch. Clams cook quickly — watch color and the internal texture (they should be opaque and firm).

Use a slotted spoon or spider to transfer cooked strips to a paper towel-lined baking sheet or a wire rack to drain. Immediately season lightly with a pinch of kosher salt while still hot for best flavor. Keep finished batches warm in a 200°F (95°C) oven on the wire rack while you fry remaining strips.
