Prepare marinade
In a shallow bowl or large plate, whisk together 3 tbs olive oil, 2 tbs fresh lemon juice, 1 tbs soy sauce, 1 tbs honey, and minced garlic. Add 1 tsp black pepper and 1 tsp kosher salt and whisk until combined.

Marinate salmon
Pat salmon fillets dry with paper towels. Place fillets skin-side down in the bowl or on the plate and spoon about half of the marinade over the flesh, reserving the remainder for basting. Let salmon sit at room temperature for 15–20 minutes or refrigerate for up to 30 minutes. If refrigerated, bring to room temperature for 15 minutes before grilling.

Grill salmon
Place salmon fillets on the grill skin-side down. Cook without moving for 4–6 minutes, depending on thickness (about 8–10 minutes per inch of thickness total). Baste the top with reserved marinade once during the first half of cooking. Flip only if necessary (for very thick fillets) and cook another 2–4 minutes until the internal temperature reaches 125–130°F (52–54°C) for medium-rare to medium, or 145°F (63°C) if you prefer fully cooked. The flesh should flake easily with a fork but still be moist.

Serve
Transfer salmon to a serving platter or individual plates. Garnish with thin lemon slices and sprinkle 2 tbs chopped fresh dill or parsley. Serve with additional lemon wedges on the side.
