Preparation and Cooking
Prepare the Brine
In a large bowl, mix together brown sugar, sea salt, black pepper, smoked paprika, garlic powder, and lemon zest.
Brine the Salmon
Submerge the king salmon fillets in the brine mixture, ensuring they are fully coated. Cover and refrigerate for 8-12 hours.
Rinse and Dry
After brining, rinse the salmon fillets under cold water to remove excess brine. Pat dry with paper towels.
Prepare the Smoker
Soak wood chips in water for at least 30 minutes. Preheat your smoker to 175°F (80°C).
Cool and Serve
Once smoked, remove the salmon from the smoker and let it cool slightly before serving. Enjoy your smoked king salmon fillets!
