Preparation and Cooking

Prepare the Brine

In a large bowl, mix together brown sugar, sea salt, black pepper, smoked paprika, garlic powder, and lemon zest.

Brine the Salmon

Submerge the king salmon fillets in the brine mixture, ensuring they are fully coated. Cover and refrigerate for 8-12 hours.

Rinse and Dry

After brining, rinse the salmon fillets under cold water to remove excess brine. Pat dry with paper towels.

Prepare the Smoker

Soak wood chips in water for at least 30 minutes. Preheat your smoker to 175°F (80°C).

Smoke the Salmon

Place the salmon fillets in the smoker, skin side down. Add the soaked wood chips to the smoker and close the lid. Smoke for 2-3 hours or until the salmon is cooked through and has a nice smoky flavor.

Cool and Serve
