Jerk Marinade
Prepare aromatics
Trim and roughly chop the scallions. Peel the garlic and ginger. If using scotch bonnet/habanero, remove seeds for less heat (wear gloves) and roughly chop.
Blend marinade
In a blender or food processor add scallions, garlic, thyme, ginger, chopped pepper, allspice, cinnamon, nutmeg, brown sugar, soy sauce, rum (if using), lime juice, vegetable oil, kosher salt and black pepper. Puree until a smooth, slightly coarse paste forms, scraping down sides as needed (about 45–60 seconds). If too thick, add 1–2 tablespoons of water to help blending.
Taste and adjust
Taste a small pinch of the marinade and adjust seasoning: more salt for seasoning, more sugar to balance heat, more lime for brightness, or extra pepper for heat. Remember flavors will mellow during marinating.
Chicken
Prep the chicken
Pat the chicken pieces dry with paper towels. Using a sharp knife, make 2–3 shallow slashes through the skin into the meat on each piece to help the marinade penetrate.
Marinate
Place chicken in a large bowl or zip-top bag. Pour about two-thirds of the jerk marinade over the chicken (reserve remaining marinade for basting/finishing). Rub marinade thoroughly into slashes and all over the pieces so they are well coated. Cover and refrigerate at least 4 hours, preferably overnight (8–12 hours) for best flavor. If short on time, marinate at least 1 hour.
Bring to room temperature
Remove chicken from fridge 30 minutes before cooking to take the chill off, which promotes even cooking.
Sear (optional step for deeper color)
Heat a large ovenproof skillet or heavy pan over medium-high heat. Add 1 tablespoon olive oil and when shimmering, add chicken pieces skin-side down. Sear 2–3 minutes until skin is golden brown and caramelized, then flip and sear the other side 1–2 minutes. This step renders fat and builds color; don't crowd the pan—work in batches if necessary.
Roast or grill to finish
Oven method: Preheat oven to 400°F (205°C). Transfer seared chicken (or directly from marinating if not searing) to a rimmed baking sheet or keep in the ovenproof skillet. Brush with some reserved marinade and roast for 25–35 minutes until internal temperature reaches 165°F (74°C) in thickest part and juices run clear. Grill method: Preheat grill to medium-high (about 375–425°F). Grill skin-side down 6–8 minutes, then flip and move to indirect heat. Continue grilling 12–20 minutes with lid closed, basting occasionally with reserved marinade, until internal temp reaches 165°F (74°C).
Finishing & Serving
While the chicken rests, warm the reserved marinade in a small saucepan over low heat for 2–3 minutes to use as a glaze (optional). Do not boil—this is only to make it safe and pourable. Spoon or brush warm glaze over chicken.
Scatter chopped cilantro or parsley over the chicken and serve with lime wedges. Offer extra hot sauce or jerk sauce on the side for guests who want more heat.
Suggested accompaniments: rice and peas, fried plantains, coleslaw, or a simple green salad.
