Prepare the Ginger

Peel and finely grate the fresh ginger. You should have about 1 cup of grated ginger.

Make the Ginger Syrup

In a saucepan, combine the grated ginger and honey. Heat gently over low heat for about 5 minutes, stirring occasionally until the honey is well mixed with the ginger.

Strain the Mixture

Remove the saucepan from heat and let it cool slightly. Strain the mixture through a fine sieve into a bowl, pressing down on the ginger to extract as much liquid as possible. Discard the solids.

Mix the Drink

In a large glass or pitcher, combine the ginger syrup with lemon juice. Stir well to combine.

Add Soda

Slowly add the soda water to the ginger-lemon mixture. Stir gently to combine, taking care not to lose too much carbonation.

Serve

Pour the Ginger Snaps into glasses filled with ice. Garnish with lemon slices if desired and serve immediately.
