Gather ingredients. Thaw frozen corn if still frozen. Finely dice the red bell pepper and yellow onion so pieces are small and easy for kids to eat.
Cook aromatics
Heat a large nonstick skillet over medium heat and add 1 tablespoon olive oil. When oil shimmers, add the diced onion and bell pepper. Cook 2–3 minutes, stirring occasionally, until softened and fragrant (do not brown).
Brown meat
Add 1 pound ground turkey (or chicken) to the skillet with the softened vegetables. Break the meat into small pieces with a spatula and cook 4–5 minutes until no longer pink.
Season
Sprinkle 1 teaspoon mild taco seasoning, 2 tablespoons water, 1 cup thawed corn, 1/4 teaspoon salt and 1/8 teaspoon black pepper over the meat. Stir to combine and simmer 2–3 minutes until the mixture is slightly saucy and well combined. Taste and adjust salt if needed.
Assemble quesadillas
Lower heat to low. Wipe skillet clean if desired and return to low heat. Place a 6-inch tortilla in the skillet, sprinkle about 2 tablespoons shredded cheddar across one half of the tortilla, spoon about 3 tablespoons of the turkey-corn mixture over the cheese, then add another 1 tablespoon cheese on top of the filling (this helps the tortilla stick when folded). Fold the tortilla in half to enclose the filling.
Cook quesadillas
Cook each folded tortilla 2 minutes per side over low-medium heat until golden and cheese is melted, pressing gently with a spatula. Repeat for all 6 tortillas. Transfer cooked quesadillas to a cutting board and let rest 1 minute, then cut each into 3 wedges (kid-friendly size).
Sides & Toppings
Plate: Arrange 2 quesadilla wedges on each child's plate with a few carrot sticks, a few apple slices, one or two avocado slices, and small bowls of yogurt and salsa for dipping.
Serve warm: Serve the quesadillas warm and supervise younger children while they eat. Leftovers can be reheated in a skillet over low heat for 1–2 minutes per side.
