1. Prepare the Onions
Peel the onions and slice them into 1/2-inch thick rings. Separate the rings and set aside.
2. Make the Batter
In a bowl, mix together the flour, cornstarch, baking powder, salt, and black pepper. In another bowl, beat the eggs and mix in the milk. Combine the wet and dry ingredients until smooth.
3. Coat the Onion Rings
Dip each onion ring into the batter, allowing any excess to drip off. Then, coat the rings with breadcrumbs.
4. Fry the Onion Rings
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). Fry the onion rings in batches until golden brown and crispy, about 3-4 minutes. Remove and drain on paper towels.
5. Serve with Sauce
Serve the hot onion rings immediately with Jefferson’s special sauce on the side.
