Marinate prawns

Pat prawns dry with paper towels. In a medium bowl combine 2 tbs olive oil, 1 tbs fresh lime juice, minced garlic, smoked paprika, kosher salt and black pepper. Add prawns and toss to coat. Let marinate at room temperature 10–15 minutes (or refrigerate up to 30 minutes).

Heat grill

Preheat a gas or charcoal grill to medium-high (about 400–450°F / 200–230°C). Clean and oil grates, or prepare a hot grill pan on the stovetop if indoor cooking.

Grill prawns

Thread prawns onto skewers (if using) or place directly on the grill. Grill 2–3 minutes per side until opaque, firm and just cooked through (internal temp ~120–130°F). During the last 30 seconds brush with melted butter. Remove from grill and let rest 2 minutes.

Garnish

Sprinkle chopped cilantro over prawns before serving.

Creamed corn

Sauté shallot and corn

In a medium skillet over medium heat, melt 2 tbs butter. Add minced shallot and sauté 1–2 minutes until translucent. Add 3 cups corn kernels and cook, stirring occasionally, until kernels begin to brown and soften, about 5–7 minutes.

Add liquids and simmer

Pour in 1 cup heavy cream and 1 cup whole milk. Stir in 1 tsp sugar, 1 tsp salt and 1 tsp black pepper. Bring to a gentle simmer and cook 6–8 minutes, stirring occasionally, until mixture thickens slightly.

Finish and thicken

If you prefer a thicker, creamier texture, blend about one-third of the corn mixture in a blender or use an immersion blender to pulse until slightly smooth, then return to the pan. Mix 1 tsp cornstarch with 1 tbs cold water to make a slurry; stir into the pan and simmer 1–2 minutes until the creamed corn reaches desired thickness.

Adjust and garnish

Taste and adjust seasoning. Stir in sliced chives if using. Keep warm until serving.

Corn salsa

Combine ingredients

In a small bowl combine 1 cup roasted/grilled corn, diced red bell pepper, diced red onion, minced jalapeño, and chopped cilantro.

Dress salsa

Add 1 tbs fresh lime juice, 1 tsp olive oil, 1 tsp salt and 1/2 tsp black pepper. Toss to combine. Taste and adjust seasoning. Let sit 10 minutes to allow flavors to meld.

Serve

Spoon corn salsa over or alongside grilled prawns and creamed corn when plating.
