Preheat and prep
Preheat your oven to 425°F (220°C). If using empty escargot shells, rinse and inspect them; if using small ovenproof dishes, arrange them on a baking sheet and set aside. Place coarse salt or breadcrumbs in the base of the escargot baking dish or spread in a rimmed baking sheet to nestle shells so they remain upright.
Warm and drain snails
If the escargot are refrigerated, bring to room temperature for 10–15 minutes. Drain any packing liquid and pat snails dry with paper towels. Taste a small piece if desired to check seasoning.
Make garlic-herb butter
In a medium bowl, combine the softened butter, finely minced garlic, minced shallot, chopped parsley, chopped thyme, lemon zest, dry red wine, salt, and black pepper. Use a fork to mash and mix until smooth and homogenous. Taste and adjust salt, pepper or lemon zest as needed. Stir in the 1/2 tablespoon lemon juice at the end.
If you prefer a smoother butter, briefly pulse the mixture in a small food processor or use an immersion blender until evenly incorporated. Transfer the garlic-herb butter to a piping bag or a small resealable plastic bag with a corner snipped, or keep in a bowl and use a small spoon.
Assemble escargot
Arrange the filled shells upright in the prepared baking dish or nestle them into the coarse salt/breadcrumb bed on the baking sheet so they will not tip over during baking.
