Prepare the Beef

Preheat your oven to 400°F (200°C). Season the beef tenderloin generously with salt and black pepper on all sides.

Sear the Beef

In a large oven-safe skillet, heat olive oil over medium-high heat. Add the beef tenderloin and sear for about 3-4 minutes on each side until a golden-brown crust forms.

Roast the Beef

Transfer the skillet to the preheated oven and roast for 20-25 minutes, or until the internal temperature reaches 135°F (57°C) for medium-rare. Remove from the oven and let it rest for 10 minutes.

Make the Red Wine Reduction

In the same skillet, add minced shallots and sauté over medium heat until translucent. Pour in the red wine and scrape up any browned bits from the bottom of the pan. Add beef broth and fresh thyme, and bring to a simmer. Cook until the sauce is reduced by half, about 10-15 minutes.

Finish the Sauce

Remove the sauce from heat and whisk in butter until melted and smooth. Season with salt and pepper to taste.

Serve

Slice the beef tenderloin and serve drizzled with the red wine reduction.
