Mashing
Begin by heating 5 gallons of water in a large brew kettle to about 165°F (74°C). Add 10 cups of malted barley to the water and maintain the temperature at around 150°F (65°C) for 60 minutes. This process converts the starches in the barley to fermentable sugars.

Boiling
After mashing, remove the grains and bring the liquid (wort) to a boil. Once boiling, add 2 cups of Cascade hops and boil for 60 minutes. This will add bitterness and aroma to the beer.

Cooling
After the boil, cool the wort quickly using a wort chiller or an ice bath. The wort should be cooled to about 70°F (21°C) before proceeding.

Fermentation
Transfer the cooled wort to a sanitized fermenter and pitch 1 packet of ale yeast. Seal the fermenter with an airlock and let it ferment in a dark, cool place for 1 to 2 weeks.

Bottling
After fermentation is complete, mix 3 cups of priming sugar with a small amount of water and boil to dissolve. Add this mixture to the beer before bottling to carbonate it. Bottle your beer in sanitized bottles and cap them.

Conditioning
Let the bottled beer condition at room temperature for about 2 weeks to allow carbonation to develop. Then chill the bottles in the refrigerator before serving.
