Trim and Pound
Trim excess fat from the chicken thighs and, if pieces are uneven, lightly pound between plastic wrap to an even thickness about 1/2 inch. This makes for even cooking.
Combine buttermilk, 1 tablespoon hot sauce, 1 teaspoon kosher salt, and 1/2 teaspoon black pepper in a bowl. Submerge the chicken in the marinade, cover, and refrigerate for at least 1 hour or up to 8 hours. The acid and enzymes tenderize and flavor the meat.
Breading
In a shallow wide bowl or rimmed baking sheet, whisk together 1.5 cups flour, cornstarch, baking powder, paprika, garlic powder, onion powder, cayenne, 1 teaspoon kosher salt, and 1/2 teaspoon black pepper until homogenous. This dry mix creates the crispy crust.
In a separate medium bowl, whisk 1/2 cup flour, 1/2 cup cold water, and 1 egg until smooth. This wet batter helps the dry mix adhere and adds an extra crunchy layer.
Frying
Pour about 3 cups neutral oil into a heavy-bottomed skillet or Dutch oven and heat over medium-high until the oil registers 350°F (175°C) on a thermometer. If you don't have a thermometer, test by dropping a pinch of flour into the oil — it should sizzle and bubble immediately.
Remove one piece of chicken from the buttermilk, letting excess drip off. Dredge first in the seasoned dry flour, then dip into the wet batter, then press again into the dry flour mixture to form a thick coating. Shake off loose flour. Repeat for all pieces.
Carefully lower the coated chicken into the hot oil, working in batches so pieces don't touch and oil temperature stays near 330–350°F (165–175°C). Fry thighs 6–8 minutes per side (total 12–16 minutes), flipping once, until golden brown and internal temperature reaches 165°F (74°C). Adjust time for thickness.
Use a slotted spatula or tongs to transfer the fried chicken to a wire rack set over a rimmed baking sheet to drain. Do not stack. Let rest 3–5 minutes; this keeps the crust crisp.
Sauce & Assembly
Make the house sauce: in a small bowl, whisk together 1/2 cup mayonnaise, 1 teaspoon yellow mustard, 1 teaspoon ketchup, 1 teaspoon apple cider vinegar, and 1/2 teaspoon hot sauce (if using). Taste and adjust salt or heat to preference.
To assemble each sandwich: spread about 1 tablespoon of house sauce on both the bottom and top bun. Place a small handful (about 1/4 cup) of lettuce on the bottom bun, set a fried chicken piece on top, then add 2 pickle slices (or more to taste), and crown with the top bun. Serve immediately while chicken is hot and crust is crisp.
