Prepare glass

If desired, chill a rocks or coupe glass by filling it with ice water while you mix the cocktail. Alternatively, place the glass in the freezer for a few minutes.

Combine ingredients

Fill a cocktail shaker with ice (about 3/4 full). Add 2 oz Javier’s Reserva Reposado Tequila, 0.5 oz St. Germain, 0.5 oz agave nectar, 0.75 oz fresh lime juice, and 2 oz fresh pineapple juice to the shaker.

Shake

Secure the shaker lid and shake vigorously for 12–15 seconds — until the outside of the shaker is frosty and well chilled. This both chills and dilutes the mix to the correct strength.

Prepare serving glass

Discard the ice water from the chilled glass (if used) and add fresh ice if serving over ice. For a coupe or up service, leave the glass empty and dry.

Strain and serve

Double-strain the cocktail into the prepared glass using a Hawthorne and a fine mesh strainer to remove small ice shards and any pulp. If serving on the rocks, pour over fresh ice in the rocks glass; if serving up, pour into the chilled coupe.

Garnish

Garnish with a pineapple wedge on the rim and a lime wheel on the rim or floated on top. Optionally express a lime peel over the drink to add aroma before dropping it in.

Serve

Serve immediately while cold. Enjoy responsibly.
